Easy. And my family love it.
Ingredients (serves 4)
- 4 large potato's
- 1/4 cup diced ham
- hand full Diced onion, and shallots.
- pinch salt n pepper.
- 4 boiled eggs.
- 1/2 cup whole egg mayo.
- 1 tsp whole grain mustard.
- pinch dried dill.
- pinch cracked pepper
Method
- Dice potatoes. Boil till tender. Drain and put in fridge to cool. Boil eggs till semi hard then put in cold water to cool down.
- diced up all salad bits put in a large bowl add potato. Peel and dice eggs add to bowl.
- DRESSING........ mix all bits together. Add to salad. Mix through and chill for at least 30 minutes before serving.

Tastes even better the next day. :-)
