Ingredients (makes 1 )

  • 2 large eggs
  • 150g caster sugar
  • 170mls light flavoured olive oil
  • 250g plain flour
  • 1/2 tsp bicarb soda
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 1 tsp vanilla extract
  • pinch salt
  • 400g grated carrot
  • 120g chopped walnuts
  • 150g cream cheese
  • 60g butter
  • 120g icing sugar
  • 20mls lemon juice

Method

  1. Whisk eggs and sugar until slightly pale.
  2. Whisk in oil.
  3. Stir in dry ingredients.
  4. Fold in carrot and walnuts.
  5. Bake in a lined round 23cm tin at 180°C (fan 170°C) for 35-40 minutes, until a skewer comes out clean.
  6. To make frosting: Beat all ingredients together until fully incorporated and a smooth consistency. Spread over the cold cake and decorate as you please.

  • I am feeling inspired and will be making a carrot cake for this Easter. I have bought some colourful and sweet chocolate eggs to decorate the cake. We are going to have fun as a family and spend some time together baking yummy foods. Everyone will have a go at decorating the cake too.

  • I am a huge fan of carrot cake and love to make it and eat it and I really do like the simple and pretty way the cake in the photo is decorated. I do love to decorate cakes with a variety of yummy and sweet Easter eggs and chocolate bunnies.

  • Carrot cake for Easter is something I never thought about. I have to bring something to our family lunch and it will definitely be this. I love carrot cake and this recipe looks foolproof which works for me after I forgot the crosses on my hot cross buns earlier this month 🫣

  • Carrot cake it my absolute favourite cake. I use to make it all the time but i haven’t made it in ages. This has inspired me to make one this easter. This recipe looks simple to make and not too many ingredients which is an added bonus. I can’t wait to enjoy this one with a cuppa.

  • Oh my word! I had never thought of baking a carrot cake for Easter, but makes total sense! I love the decorations on this one! I looks really pretty and it’s a nice simple recipe great to do with kids or for beginners. And hey it has veggies so that makes it healthy!

  • Carrot cake can be so lovely and moist. I like to make my carrot cake with wholesome ingredients and use almond meal, organic maple syrup, eggs, walnuts and pecans and ground flax seed or flax meal and of course plenty of spices. You can make the frosting also a bit healthier with a mixture of cream cheese and cottage cheese and maple syrup.
