Quick, easy and tasty salmon pattie recipe. Healthy and a huge hit with everyone!
Ingredients (serves 4)
- 2 large potatoes (Diced, boiled and mashed)
- 400g tinned salmon (take out the bones, keep juice from tin)
- 1/4 cup corn Kennels (canned)
- 1 small onion, grated
- 1/4 cup parmesan, grated
- 2 eggs
- 1 tsp chives
- 1 cup breadcrumbs
Method
- Mix and mash all ingredients together
- Heat some oil in a shallow fry pan
- Form small flat patties from mixture, add to hot oil
- Fry each side until golden and flip over to repeat until desired crispness is achieved
- Serve with side salad or add to your favourite burger buns
