Really basic salad recipe loaded with egg and parmesan cheese.
Ingredients (serves 1 | makes 1 Salad)
- 2 Boiled Eggs
- 2 Cups Baby Spinach
- 1 Avocado
- 1/2 Cup Fresh Parmesan
- Dressing: Whole egg mayo or a simple squeeze of lime or lemon juice.
Method
- Slice up your boiled eggs and avocado.
- Add your baby spinach, eggs, avocado, dressing of choice and parmesan and gently mix them without squashing the ingredients.
- Top with more parmesan if you LOVE parmesan like I do.
