Really basic salad recipe loaded with egg and parmesan cheese.


Ingredients (serves 1 | makes 1 Salad)

  • 2 Boiled Eggs
  • 2 Cups Baby Spinach
  • 1 Avocado
  • 1/2 Cup Fresh Parmesan
  • Dressing: Whole egg mayo or a simple squeeze of lime or lemon juice.

Method

  1. Slice up your boiled eggs and avocado.
  2. Add your baby spinach, eggs, avocado, dressing of choice and parmesan and gently mix them without squashing the ingredients.
  3. Top with more parmesan if you LOVE parmesan like I do.
