My Nanna used to make this ice-cream in Summer, before anyone had ice-cream machines in their homes. It’s been a family favourite for years. It’s really easy to make, and makes a refreshing end to a meal.


Ingredients (serves 4)

  • 3 Granny Smith Apples (cored and grated, with skin on)
  • 250 ml Cream
  • 1 cup Milk
  • 4 Egg Yolks
  • 125 gm Caster Sugar
  • 2 tablespoons Lemon Juice

Method

  1. Place the cream and milk in a saucepan, heat until just below boiling point. In a mixing bowl, beat together the egg yolks and sugar until thick and pale. Whisk 2 tablespoons of the hot cream and milk into the egg mixture. Slowly add the rest of the cream and milk, whisking as you go.
  2. Return the mixture to the saucepan and cook over a low heat, stirring for 8 minutes or until the mixture coats the back of the spoon. Pour into a bowl and refrigerate until cool.
  3. Place the lemon juice in a bowl and combine with the apple. Add the cooled cream mixture, ensuring it is well combined. Pour into an ice-cream maker, and make according to manufacturer's instructions.
  4. Alternatively, pour mixture into a metal bowl and place in the freezer for 2 hours or until set around the edges, but soft in the middle. Beat with an electric mixer and return to the freezer until firm.

Notes

I sometimes add a finely diced Kiwi fruit to the mixture, and a few finely chopped walnuts or pistachios. Creamy but with a subtle bite, it's delicious served with fresh fruit.
