Healthy nachos that the whole family can enjoy
Ingredients (serves 2)
- Sweet Potato
- Mince meat
- Spinach Leaves
- Shredded Beatroot
- Shredded carrot
- Shredded cheese
- Corn kernals
- Diced tomato
- Diced Onion
- Tinned tomatoes
Method
- Slice sweet potato and cook at 180 degrees for 30 mins. Dice / shred remaining ingredients.
- Fry onion until brown
- Stir in mince and tinned tomatoes until mince is cooked
- Remove sweet potato from oven and layer with all ingredients onto slices.
- Top with cheese and return to the oven for a further 5 mins.
- Remove from oven and enjoy
Notes
This recipe can be made vegetarian by removing mince and adding 4 bean mix
