Super quick and healthy breakfast/snack/lunch or for the lunch box


Ingredients (makes 6 Mini Pancakes)

  • 2 Eggs
  • 4 tablespoons Self raising flour
  • 2 tablespoon Rolled oats
  • 1 Banana
  • Handful Spinach
  • Splash Milk

Method

  1. Put all ingredients in food processor or blender and blend until smooth
  2. Cook in a pan on medium heat until golden on each side
  3. Top with honey or maple or berries or have as is

Notes

Can sub the milk for dairy free alternatives

  • Great way to incorporate spinach.

  • Thank you for sharing this recipe. It not only offers me a healthy alternative for my toddler’s snack time these sound deliciously good and so easy to make. I’m going to make some for my sister using GF alternatives, I know she’ll enjoy them too, a great morning or arvo tea for work.

  • I’m interested to see what this tastes like!
    I think if I made it look like a Frankenstein my toddler would eat it for sure lol.
    She’s not really a fan of greens unless it’s broccoli but it would be good if she could eat more.
