Super quick and healthy breakfast/snack/lunch or for the lunch box
Ingredients (makes 6 Mini Pancakes)
- 2 Eggs
- 4 tablespoons Self raising flour
- 2 tablespoon Rolled oats
- 1 Banana
- Handful Spinach
- Splash Milk
Method
- Put all ingredients in food processor or blender and blend until smooth
- Cook in a pan on medium heat until golden on each side
- Top with honey or maple or berries or have as is
Notes
Can sub the milk for dairy free alternatives
