A very simple dish to whip up.


Ingredients (serves 1)

  • Red Capsicum
  • Pumpkin
  • Sweet Potato
  • Feta Cheese
  • 1-2 slices Bread of your Choice
  • Spinach or Rocket
  • Balsamic Vinegar
  • Olive Oil

Method

  1. Preheat oven to 180 degrees. Thinly slice vegetables. Peel if required. Coat in olive oil and bake until cooked. You can also grill veggies if you prefer.
  2. Remove skin from capsicum. Toast bread. Layer vegetables on top of toasted bread.
  3. Top with spinach or rocket and crumbled feta. Drizzle with olive oil and balsamic. Enjoy!

Notes

Use as much or as little of the veggies as you would like. You could also add zucchini, mushrooms, eggplant, etc. The thinner you cut the veggies the quicker they will cook, however, don't slice too thin.

  • I really love this vegetable combination of red capsicum, sweet potato and and pumpkin it would taste sweet with a touch of salt from the feta cheese and balsamic vinegar it’s a win win dish.
