This nourishing soup is great for mums in need of a pick me up!
Ingredients (serves 4)
- 1 litre vegetable stock
- 1 thumb chopped ginger
- 1 chopped red chilli
- 4 cloves garlic
- 1 packet buckwheat soba noodles
- 1 packet cubed firm tofu
- 2 bunches Bok choi
- 2 cobs sweetcorn
Method
- Simply bring 1 litre of vegetable stock to the boil and add a thumb of chopped ginger, 1 chopped red chilli and four cloves of garlic.
- Add a packet of buckwheat soba noodles the corn taken from two cobs and 1 packets of cubed fIrm tofu. Cook for 3 minutes.
- Add two bok choi chopped stir then serve.
Notes
You can substitute tofu with leftover roast chicken if you prefer.
