Packed with protein, you may want to double the recipe and freeze.
Ingredients (serves 4)
- 1 small onion diced
- 4 cups of homemade or bought Campbell vegetable stock
- 5 small red potatoes diced
- 220 grams lean beef diced (sirloin or tenderloin)
- 2 sprig of fresh thyme
- 1 teaspoon vegemite
Method
- Add all ingredients into a slow cooker and simmer 3 hours on low.
- Remove thyme stem and add to food processor and puree.
