This is a great salad to do if you have left over roasted pumpkin.
Ingredients (serves 6)
- 1 Washed lettuce
- half pumpkin - roasted
- 1/2 cup toasted pine nuts
- 125g goats cheese
- vinaigrette dressing of your choice.
Method
- chop pumpkin into cubes.
- Crumble or chop goats cheese into cubes.
- Mix lettuce, pumpkin, pine nuts and goats cheese. Drizzle with vinaigrette dressing.
Notes
I also chop the pumpkin into cubes before roasting and roast like this so there is not chopping of this in step 1. To toast pine nuts - spread on a baking sheet and place in oven until they turn colour a little. watch them as it is very easy to over cook and burn them. All quantities are approximate.
