Such and easy recipe but always a summer winner
Ingredients (serves 4)
- 4 med. to lge. Potatoes, peeled and chopped
- splash vinegar
- 1/2- 3/4 cup mayonnaise
- 4 slices ham, chopped
- 4 lge gherkins,chopped
- 5 sprigs parsley
Method
- Place potatoes in to a saucepan with enough salted water to cover. Add the vinegar (this will help to stop potatoes falling apart ) Boil until tender, drain and cool
- Mix the ham, Gherkin,parsley and mayonnaise gently through the potatoes

I always get comments when i bring this to a bbq, I'm a little embarrassed when asked for the recipe.... because its so simple !
