Very quick and easy salad for dinner. It is also extremely filling. You could also top it with some feta for extra flavour.
Ingredients (serves 8)
- 2 Tablespoons olive oil
- 3 Tablespoons lemon juice.
- 1/4 teaspoons Red Pepper flakes
- 1 Large Tomato diced
- 1 Cucumber diced
- 1 Green Capsicum diced
- 2 Spring onions chopped.
- 1 1/2 cups Prepared Pearl Couscous
- 1/4 cup Chopped Parsley
- 1/4 teaspoons Sea salt
- Fresh ground pepper to taste.
Method
- Whisk together olive oil, lemon juice and red pepper flakes to form your dressing.
- In a large bowl toss together tomato,cucumber, capsicum, spring onions, and cooked pearl couscous. Add Parsley and dressing tossing well to combine.
- Season well with Sea salt and Pepper.
