Ingredients (serves 1 | makes 1 )
- 100 grams Baby spinach
- 6 Cherry tomatoes, halved
- 1 tsp Garlic, crushed
- 1/3 cup Cashew nuts, unsalted
- 1 Small cucumber
- 1/2 cup Brown rice, cooked
- 6 Mixed olives green and black
- 150g Tin salmon
Method
- Scatter the Baby spinach over the plate.
- Heat up rice in micowave and stir in garlic, set aside and finish off the rest of the salad
- Scatter the rest of the ingredients over the plate and serve.
