Ingredients (serves 1 | makes 1 )

  • 100 grams Baby spinach
  • 6 Cherry tomatoes, halved
  • 1 tsp Garlic, crushed
  • 1/3 cup Cashew nuts, unsalted
  • 1 Small cucumber
  • 1/2 cup Brown rice, cooked
  • 6 Mixed olives green and black
  • 150g Tin salmon

Method

  1. Scatter the Baby spinach over the plate.
  2. Heat up rice in micowave and stir in garlic, set aside and finish off the rest of the salad
  3. Scatter the rest of the ingredients over the plate and serve.

  • Sounds lovely and healthy, quick also.
