A Quick easy fried rice with a smokey flavor.


Ingredients (serves 8)

  • 500g Rice, cooked & cooled
  • 1 Brown onion,diced
  • 1 Carrot, grated
  • 1/2 cup Red capsicum, diced
  • 1 cup Bacon, diced
  • 1 cup Frozen pea's & corn
  • 2 Cloves garlic, crushed
  • 1/4 cup Soy Sauce
  • 2 Eggs
  • 1cup smoked chicken

Method

  1. Cook, drain and cool rice & set a side.
  2. Fry onion, garlic & bacon once onion translucent add lightly beaten eggs, add grated carrot, frozen peas & corn, capsicum mix well add smoked chicken, cooked rice and soy sauce mix until well combined and rice heated through + salt & pepper to taste and it is ready to eat!!

Notes

Can substitute smaked chicken for normal chicken, prawns,pork!
