Ingredients (serves 2)
- 150gm Frozen spinach, defrosted and steamed
- 10 large pitted olives
- 1/2 cup Cooked wild rice
- 1/2 cup Cooked peas
- 1/2 small avocado
- 50gm Feta cheese
- 10 Brazil nuts
- Salt and pepper to season
Method
- Mix the first 4 ingredients well
- Top salad with avocado, cheese, brazil nuts and season to taste
- Serve
