Easy and simple meal for lunch.


Ingredients (serves 3)

  • 400 gr Green bean, sliced
  • 1 tray Fried tofu
  • 100 gr Dried enchovy, fried
  • 1 big Red Capsicum
  • 2 Garlic
  • 1/2 big Onion
  • 1/4 tbs Shrimp paste

Method

  1. Blend red capsicum, garlic and onion until fine paste.
  2. Heat oil in saucepan and add in blended paste and shrimp paste, stir until fragrant. Add in green bean, fried tofu and enchovy, stir until green bean withered about 5- 10 minutes. Ready to serve

  • Almost vegetarian, will have to try it with soy instead of anchovy and shrimp paste. Looks good though

  • I’ve never cooked with tofu. Is there anything else that I could substitute for it? If not, I guess I could give it a go, as I love the rest of the flavours in the recipe. And there’s no coriander, which is great.
