A quick and easy lunch you can prepare the night before, Ready for for work the next day
Ingredients (serves 2)
- 1/2 cup Couscous ( made to directions on packet )
- 3 marinated artichoke heart quarters, cut into smaller pieces
- 2 Tablespoons Pumpkin seeds
- 2 tablespoons sunflower seeds
- Marinated Feta ( or plain is fine )
- small handful almonds and raw cashews
- 1 med Beetroot roasted , cubed
- squeeze lemon juice
- salt and pepper to taste
Method
- Stir all ingredients through cooked couscous
- Enjoy !
Notes
You can really add anything you like to this salad. I have chopped up left over roast vegies, BBQ chicken, Left over roast lamb Its really yummy and healthy
