When passionfruit are in season, buy a big bag and make a double batch.
Ingredients (makes 1 medium jar or 2 small jars)
- 60g Fresh passionfruit (about 8)
- 60g butter
- 3 eggs
- 100g raw sugar
Method
- Place sugar in Thermomix bowl and mill 3 seconds speed 9.
- Add remaining ingredients and cook 15 mins speed 2 80 degrees.
- Pour into clean jar and refrigerate when cool.
Notes
This sets to a firm curd in the fridge. Reduce the number of eggs from 3 to 2 if you want it to be runnier. Keep refrigerated. Use within 3 weeks.
