Ingredients (serves 6)

  • 420g can tuna in olive oil, drained
  • 420g can mixed beans, drained
  • 125g can corn kernels, drained
  • 2 sprigs spring onion, sliced thinly
  • 2 tbsp parsley, chopped finely
  • 1 tbsp whole egg mayonnaise
  • 1 lemon, juiced
  • salt to taste

Method

  1. Place all the ingredients in a large bowl and toss to combine.

  • Hubby would love this, so I’ll give it a whirl
