More and more people are choosing to avoid gluten these days in a effort to control their health, it’s nice to have a party snack on hand that everyone can eat!
Ingredients (serves 8)
- 1/2 cup Brown rice
- 1 head Cos lettuce
- 1/2 cup Quinoa
- 1 tin Flavored tuna
- 1tbs Balsamic dressing
Method
- Cook rice and quinoa until thoroughly cooked
- Stir through tinned tuna (I usually use a tomato based flavour)
- Wash and separate lettuce leaves into cups, dress with balsamic
- Scoop a small amount of rice and tuna onto each leaf and serve as a finger food
Notes
These are a great gluten free snack option for parties, it's nice to have something substantial that everyone can eat
