Easy low sugar recipe for ice cream lovers

Ingredients (serves 4)

  • 300 mls Double cream
  • 1 tablespoon raw honey
  • 1 Teaspoon natural vanilla extract

Method

  1. Place all ingredients into a medium sized bowl.
  2. Beat with an electric mixer on low speed until all ingredients are combined, and the texture resembles whipped cream.
  3. Place into an airtight container, place in freezer, check after half an hour to 45 mins to see if the ice cream is your preferred consistency. Time in freezer will depend on your preference and how cold your freezer is.

  • This looks better than bought ice cream.

  • By using double cream instead of evaporative milk as our Grandmas did, no gelatin is needed. If you aren’t a sweet tooth you may be able to reduce the honey a fraction too. No artificial substances like bought icecream does.

  • Is there a problem with hardness if left overnight? Just thought may be a problem given wording if recipe. Love the ingredients.
