A great healthy snack option


Ingredients (serves 3 | makes 30 tots depending size )

  • 2 Zucchinis grated
  • 2 Carrots grated
  • 4 Potatoes grated
  • 2 Eggs
  • 1/2 cup Breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1 tsp Garlic powder
  • 1tsp Onion powder
  • Salt + pepper

Method

  1. Grate all vegies into a bowl, Add salt Let sit for 20 mins
  2. Strain as much liquid from the veggies as you can * I use a tea towel
  3. Preheat oven 200c Add all the dry ingredients to the mixture and combine together. Add egg and mix
  4. Shape into "tot" shape and place on greased tray Place in oven cook for 20-25 mins turning half way through cooking
