My kids love this cold for lunch.


Ingredients (serves 6)

  • 2 1/2 cups Grated or diced veg of choice.
  • 1 diced Onion
  • 1 cup Self raising flour.
  • 1/4 cup Vegetable oil
  • 8 Eggs
  • pinch Salt and pepper
  • 1 cup Cheese
  • 3/4 cup Diced bacon

Method

  1. Put all bits except egg in a bowl. Mix together.
  2. Lightly whisk eggs and mix into veg bowl.
  3. Put in baking paper lined dish. Bake on 175 for 20 minutes.

Notes

Yummy way to get kids to love their veg. :-)

  • Yum, this would be great hot or cold, with mashed potato & pumpkin. A bit like on of those “crustless quiches” that are made with pastry mix. I’d like to try it with a little garlic & chilli added, for a bit of extra zing.
