My kids love this cold for lunch.
Ingredients (serves 6)
- 2 1/2 cups Grated or diced veg of choice.
- 1 diced Onion
- 1 cup Self raising flour.
- 1/4 cup Vegetable oil
- 8 Eggs
- pinch Salt and pepper
- 1 cup Cheese
- 3/4 cup Diced bacon
Method
- Put all bits except egg in a bowl. Mix together.
- Lightly whisk eggs and mix into veg bowl.
- Put in baking paper lined dish. Bake on 175 for 20 minutes.

Yummy way to get kids to love their veg. :-)
