Healthy bubba veggie soup for the rainy weather.
Ingredients (serves 6)
- 1 kg Sweet potato
- 5 large Carrots
- 250gm Broccoli florets (I used frozen ones from Coles)
- 1 cup Raw walnuts
- 500mL Water
- 3 tbsp miso
- 1 tsp ginger paste
Method
- In a large pot, bring water to boil and put in chopped potato, carrots, and broccoli. Cook until all veggies are soft.
- Add in walnuts, miso and ginger paste. Stir well.
- Blend with a handblender and serve!
Notes
I feed this soup to both my bub and hubby. Easy and nourishing!
