Quick & easy snack for breakfast, lunch or dinner. Everyone will enjoy.

Ingredients (serves 4)

  • 1 Cup Plain Flour
  • 1/2 Can Creamed Corn
  • 1 Tsp Baking Powder
  • 1 Egg
  • 2 Tsp Sugar (optional)
  • 1/2 Tsp Salt (optional)
  • 1/2 Cup Milk

Method

  1. Place the flour, baking powder, sugar & salt into a bowl.
  2. Mix egg & milk together & pour into flour mixture. Add in creamed corn & mix altogether with a spatula.
  3. Cook on frying pan or BBQ allowing mixture to bubble before turning.

Notes

I use to make these sugar & salt free when my daughter was a baby, taste fine. The option to leave those ingredients out is there. Excuse my picture, these were cooked on the BBQ & were still delicious.

  • These would be a good lunchbox option for older kids.

  • Definitely omit salt and sugar for babies. Maybe add extra veggies too, for that health boost

  • What a great way to use up leftover creamed corn – I always have some leftover after other recipes, so this is so much better than throwing them out
