Every time I cook this, I have to share the recipe….. so Mums, here it is!
Garlic Prawns: 1/4 cup olive oil, 5 cloves crushed garlic,3 chopped red chillies, 700g green prawns (shelled), 50g butter, bunch of spring onions chopped, bunch of parsley chopped, packet of rocket (lemon wedges and crusty bread if you like too). Basically just cook the garlic and chilli in the oil, toss the prawns in and the butter too. Season with pepper and the greens. Take the pan off the heat and pour onto a serving dish with lemon wedges around edges.
Green Salad – On a large platter scatter a packet of baby spinach leaves, toasted walnuts, avocado slices, chopped anchovies and dress with a caramelised balsamic
