Fan forced, fan assisted and convection ovens, what’s the difference?
You have probably heard of these terms before but may not be quite sure what they all mean. Convection refers to the movement of heat, and convection oven is a generic term that refers to any oven that utilises a fan. An oven that does not have a fan is called a static oven, although these are rare now.
A fan operates by evenly distributing heated air around the oven cavity allowing the food to cook quicker, at lower temperatures and more evenly.
With a fan assisted oven the fan distributes heat generated by the standard oven elements however with a fan forced oven the fan has an additional heating element mounted around the fan itself.
Some icons used internationally to denote whether an oven is fan assisted or fan forced:-
As a general rule you would set the temperature in a fan forced oven 20˚C lower than a fan assisted oven, and cooking time in a fan forced oven is up to 25% quicker than in a static oven. This means there is a significant energy saving of up to 20% if the fan-forced cooking mode is used. The actual saving obviously depends on the age and build quality of the oven.
