There’s no better ingredients to have in the pantry than a range of good quality olive oils.

So then no matter what recipe you’re whipping up, the flavours will sing and the tastes will be amazing.

Whether you’re dressing, dipping, drizzling, drinking, roasting, toasting, baking or making … with Bertolli’s range of olive oils, there’s an olive oil that makes every recipe special and oh so simple!

Dressing – whether you’re whipping up a creamy Garlic Aioli like in this Roast Vegetable Salad with Garlic Aioli or mayonnaise or you’re making a zesty vinaigrette, the best base is a quality organic olive oil.

For an aioli or mayo, we recommend an olive oil that is slightly lighter in flavour so as to not overpower the flavour.  Go for Bertolli Organic Extra Virgin Olive Oil Gentile.

A zesty vinaigrette can carry a more robust olive oil flavour as the vinegar will balance out the flavours. Bertolli Extra Virgin Olive Oil Robusto ticks the box for us in the dressing stakes.

Dipping – forget store bought dips before dinner! Find a shallow bowl and pour in a generous serving of quality organic olive oil – go for one with extra flavour.

Serve with chunks of sourdough bread or Focaccia Bread with Cheese.  You might even like to add a few drops of balsamic vinegar.  So good and absolutely all you need with a drink before dinner or as a side to a salad.

When you are looking for an olive oil for dipping, be sure that organic means organic. Bertolli uses only organically grown olives and their organic range all carry the Australian Certified Organic logo.

Drizzling – almost everything you cook with olive oil gets even better if you add an extra little drizzle just before serving.

Whether it’s a salad, pasta, steamed veges, risotto, roast veges or slow cooked lamb shanks, add a quick drizzle of the olive oil you used when making the dish before serving.  Do as the chefs do and allow a few drops to swirl across the plate!

Drinking – what a wonderful way to drink the goodness of olive oil!

And with Bertolli’s older trees with deeper roots, the flavour their organic olive brings to this Honeydew & Evoo Sour Recipe touches your soul … deeply!

Roasting – this one may seem obvious but the right olive oil can take your roast vegetables to the next level when it comes to depth of flavour.

After all, with over 150 years of expertise the folks at Bertolli know a thing or two about perfectly balancing flavour with purpose. With the right olive oil, the recipe for getting roasts just right is simple!

When roasting vegetables, we recommend placing all the veges into a large bowl then adding olive oil, sea salt flakes, cracked pepper, crushed garlic and fresh herbs.  Toss everything together thoroughly until all the vege pieces are evenly coated. Then turn out onto a very hot baking tray lined with baking paper.  Pop them straight into a hot oven and rotate often until cooked through and caramelised on the outside.

Serve with an extra drizzle of olive oil as soon as the veges come out of the oven.

Toasting - there is nothing more simple than home-made croutons or toasted breadcrumbs.

It’s a wonderful way to add an extra layer of texture to salads, vegetables or a super simple pasta dinner of spaghetti, fresh herbs, fresh chilli, loads of parmesan, a generous drizzle of organic olive oil and a handful of beautifully toasted sourdough crumbs.

We love that Bertolli have packaged up their olive oil in a handy spray can – the perfect way to gently coat the breadcrumbs while you toast them stove top or under the grill. If you’re a fan of simple vegetable sides, you definitely need to check out the Green Beans with Pangrattato recipe from Bertolli.

Baking – did you know that olive oil is commonly used in baking?

You may be forgiven for thinking that baking is all about butter but it’s not. Whenever you’re thinking sweet baked treats, think olive oil. Muffins, fruit loaves, breads, focaccia and of course puddings all welcome olive oil to the party.

Adding a depth of flavour and a moist finish, look for an olive oil that’s light and fruity. We’re loving on Bertolli’s Extra Virgin Olive Oil Gentile. Check out the Choc Puddings with Raspberries Recipe we developed for Bertolli.

Making – What do you get when you whip a gentle olive oil like Bertolli Organic Olive Oil Gentile through melted chocolate? You get Cherry Chocolate EVOO Mousse. The perfect dish for entertaining friends – the recipe is simple but also just a little bit special.

We love adding a tablespoon of Bertolli Organic Olive Oil Gentile when we’re melting chocolate for Rocky Road. The end result is a silky smooth finish and chocolate that doesn’t harden so much you can’t cut it!

Frying – some people may try to tell you that you shouldn’t take olive oil to a temperature hot enough to fry.  We’re here to tell you to keep it simple!

There’s no need to have separate oils in your pantry for the times you feel like a little something shallow fried.  Look for the lightest olive oil in terms of taste and use as you would any other oil.  You’ll find olive oil drains beautifully too – simply drop whatever you are frying onto absorbent towel for a moment or two before serving. The result is a beautiful light finish that’s a dream to eat.

What to look for in an Olive Oil.

When you are shopping for olive oil, it’s important to always look for quality olive oil.  Even better if you know the story behind the company that has grown and produced the oil as well as the processes they have used.  Actually when it comes to olive oil, the more pure it is, the better.
