Easter is such a lovely time to get together with family and friends.

So we thought that if you’ve got any plans to entertain over the long weekend, a few special recipes might be handy.  We’ve looked for a mix of seafood and meat – is there a MoM recipe you think is missing?  Or one of your own we should add?

Happy Easter long weekend everyone; we hope the time with your family (or just a lovely 4 day break) is exactly what you need to recharge!

These Sesame and Shallot Egg Pots are perfect for a breakfast for two – or twenty. Serve with a side of bacon, sausages, balsamic mushrooms or just a few drops of tabasco or soy and away you go.

Grab a glass of wine, lay out some beautiful fresh prawns, heaps of fresh coriander (and mint if you like) and roll away! If your kids are anything like mine, there won’t be many rice paper rolls that actually make it to the platter – they eat them as we make them!

If you go meat free on Good Friday, this is the perfect dish!  Easy to prepare, beautifully fresh and tasty and very low in fat. Delicious!

Pop out a platter of these and they will be gobbled up in seconds.  A really filling little appetiser … or make the pikelets just a little larger and they’ll be a meal in themselves.

Who doesn’t love a slab of fresh salmon?  So tasty and so good for you.  Make it a little bit special with the addition of toasted macadamias on top and through the cous cous salad. Crunch … YUM!
