This is a wonderful, tasty, easy, healthy recipe that gives lots of vegetable protein and fibre with some great spices for anti-oxidants.

Ingredients (serves 1)

  • 0.25 chopped onion
  • 0.25 chopped tomato
  • 1 tsp garlic minced
  • 1 tbl tomato paste
  • 0.25 cup cooked kidney beans
  • 0.25 cup cooked chickpeas
  • 0.1 cup cooked mung beans
  • 0.5 tsp basil
  • 0.5 tsp oregano
  • 0.25 tsp tumeric
  • 1tbl grated cheese (optional)


  1. Stir fry chopped onion, tomato, garlic and tomato paste
  2. Stir in beans, basil, oregano and tumeric
  3. Spoon mixture into dish (add cheese topping if desired) and bake until warmed through
