A simple treat to whip up that the kids…and big kids will love!


Ingredients (serves 4)

  • 1 Cup Flour
  • 2 Tsp Baking Powder
  • 1/4 Cup Caster Sugar
  • 1/4 Tsp Cinnamon
  • 1/8 Tsp Salt
  • 1 Egg, Beaten
  • 1/2 Cup Milk
  • 1 Tsp Lemon Juice
  • 1 Cup Apple, Peeled and Diced
  • 1/4 Cup Sugar (Combined with Cinnamon portion below for rolling)
  • 1 Tsp Cinnamon (Combined with Sugar portion above for rolling)
  • Oil for frying

Method

  1. In a deep pot, bring 2-3 inches of oil to 375 degrees over medium heat
  2. In a medium bowl, whisk together the flour, baking powder, sugar, cinnamon, and salt
  3. Stir in the egg and milk until the batter is smooth
  4. Toss the diced apples in the lemon juice and add to the batter. Stir to combine
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes on each side
  6. Remove to a paper towel lined plate to drain for a few minutes
  7. Toss in the cinnamon and sugar mixture and serve immediately

  • Sounds very much like a Dutch recipe called “appelflappen”which are eaten around New year Eve together with “oliebollen”. I still make them every year around this time, with difference that I don’t use sugar in the batter but some raw vanilla powder and sweeten the apples with cinnamon as well. Keeping the apples in a ring makes it easier to handle and fry.
