A quick and super easy salad that is so refreshing to eat with meat or hot chips.


Ingredients (serves 4)

  • 3 Large avocados
  • 1/2 Small iceberg lettuce
  • 1/2 Continental cucumber
  • 4 Large pickled onions
  • 2tbsp Whole egg mayonnaise
  • 2tspn Brown vinegar
  • Sprinkle Black pepper

Method

  1. Cut up all ingredients into cubes/slices and place all into a large salad bowl. I find if I cut the cucumber in half length ways and then cut into slices, they are easier to combine and eat.
  2. Mix in the vinegar and then the whole egg mayonnaise, mix until coated evenly. Sprinkle on the black pepper.
  3. Serve with grilled meat. If you are feeling daring, this recipe is also divine with hot chips and breadcrumbed chicken!

Notes

This recipe is super easy and will be a hit at BBQs!

  • Yum thus Avocado salad looks very healthy appetising. My children would love to try this and it looks very easy to make with few ingredients and I like the added pickled onions for something unique in flavour.
