Healthy and easy to whip up wholewheat & fruit muffins!


Ingredients (makes 10 )

  • 2 Ripe bananas
  • 3 Pears - grated
  • Half cup Sugar
  • 2 Eggs
  • 4 tablespoons Coconut oil
  • 1 1/2 cups Wholewheat flour
  • 1 Tablespoon Baking soda
  • 1 teaspoon Cinnamon
  • Pinch Nutmeg
  • Pinch Salt
  • 1/2 cup Chopped walnuts
  • 1/2 cup Dark choc chips
  • Tablespoon Vanilla essence

Method

  1. Pre-heat oven to 190o. Mash bananas, sugar, eggs, coconut oil, vanilla essence with a potato masher or spatula. (Can be lumpy afterwards).
  2. Mix flour, baking soda, salt, cinnamon & nutmeg together.
  3. Incorporate dry mix into wet mix but don't over mix!
  4. Incorporate grated pear, walnuts & choc chips. Spoon mixture into muffin cases and bake for 25 to 30 minutes - until springy to touch!

Notes

I have made this recipe so many times and have also included variations which make them just as amazing (ie: added apple, carrot or zucchini, without nuts etc) Perfect for adults and amazing for kids (school lunch box or home snack)!!!
