A healthy alternative to processed flour desserts, perfect for gluten sensitivities and hungry little tummies!


Ingredients (serves 4)

  • 1 Cup Arborio rice
  • 1 1/2 cups water
  • 2 cups milk
  • 50g Butter
  • 1/3 cup caster sugar
  • 1 tsp cinnamon
  • 1 mashed banana
  • 2 tsp Honey

Method

  1. boil water, salt, and butter in a medium saucepan. Add the rice, return to a boil, and then reduce the heat to the lowest setting. cook until rice has absorbed the water
  2. Bring milk, sugar, vanilla,cinnamon to a simmer in a separate saucepan. Add the cooked rice and cook at a simmer over medium-low heat until rice absorbs most of the milk and mixture starts to get thick and silky, about 10 to 15 minutes
  3. Mash banana and stir into cooling rice, add honey and remaining cinnamon, can be served hot or cold

Notes

The longer you rest the rice the thicker it becomes
