A quick and east Beef Chow Mein packed full of vegetables.


Ingredients (serves 6)

  • 1kg Beef Mince
  • 1L Chicken Stock
  • 1 cup Rice
  • 1/2 cup Fozen Peas
  • 1/2 cup Frozen Corn
  • 1/4-1/2 Cabbage - Sliced
  • 1 Large Carrot - Sliced
  • 1 Large Zucchini - Sliced
  • 3/4 cup Broccolli - Cut
  • 1 Large Onion - Sliced
  • 1 Clove Garlic
  • 1-2 teaspoons Curry Powder
  • 2 tablespoons Soy Sauce
  • Olice Oil

Method

  1. Brown Onion and Garlic in a fry pan or wok with a little olive oil then add the Mince to brown.
  2. While the Mince is cooking slice all of the vegetables.
  3. Once the Mince is cooked add all of the vegetables to the pan, with the Rice, Chicken Stock, Soy Sauce, and Curry Powder then stir through.
  4. Cook for 20 minutes or until the rice is cooked, adding more rice is needed.

Notes

This Chow Mein is packed full of vegetables and kids will love it! It is so versatile that any vegetables can be added and can be adjusted to your liking. This recipe serves 6 as I love to make extras for lunch the next day. Chicken or Chicken Mince can be added instead of Beef.

  • An old classic! I used to have this for dinner as a child. The amazing thing about Chow Meinā€¦.it looks shocking but tastes GREAT!

  • always thought that chow mein was cabbage and vegies with little meat. this is in proportion. The green colour is so offputting though

  • I really enjoy chow mein, it is a quick easy meal for a Friday night, kids love it too. I make mine very similar to yours, but with a bit of oyster sauce and I add chilli to mine after I’ve served the kids. Thanks for sharing.
