Ingredients (makes 1 smoothie bowl)

  • 1 cup fresh ripe strawberries, halved
  • 1/2 cup fresh blueberries
  • 1 large ripe banana, peeled and frozen
  • 1 large cooked beetroot
  • 5 ice cubes
  • 1/2 cup light coconut milk or almond milk
  • 2 teaspoons pure maple syrup or honey
  • To Serve Fresh mixed berries, muesli, flaked or shredded coconut, plain yoghurt

Method

  1. Add all ingredients for the smoothie to a high-powered blender. Blend until thick and smooth. Pour smoothie into two bowls. Top with choice of fresh berries, granola, flaked coconut, and/or plain yogurt

  • I’m not sure about the beetroot, as I’m not a beetroot fan, but this does look divine!

  • I have never tried a smoothie bowl, I don’t know that I’m that adventurous. I do love a smoothie though, just in it’s normal form.

  • Oh I am not sure about this one. I t kind of looks like a cold soup. I don’t mind cold soups but not when they are not soupy.

  • I love most of these ingredients and would have them either as a breakfast cereal or a smoothie. The thought of beets … not too sure!

  • Haha, when I first read the headline I clicked through because I thought it said ‘Best Smoothie Bowl’. I was intrigued. Beet!? Hmm, not sure. Loving all the other ingredients though.
