This beetroot jelly is one of my favourites.
Ingredients (serves 8)
- 1 can Beetroot
- 1 packet Port wine jelly
- 500 gms Hot water
- Squirt Canola spray
- Boil water and melt jelly crystals.
- Spray a glass pie dish.
- Drain the rest of the beetroot juice into the jelly and mix through.
- Layer the beetroot on the bottom of the pie dish covering the bottom of the dish. Pour the jelly over the beetroot.
- Cover and refrigerate until set. Cut up into squares.
