Ingredients (serves 1)

  • 1 cup Cooked black or brown rice (I use black)
  • 1 cup Peas
  • 2 heaped tablespoon Macadamia Sundried tomato pesto (see my recipe in SIDES)
  • 1 handful Walnuts

Method

  1. Mix all ingredients well and serve!

Quick to whip up and healthy for you!

  • What a different vegetarian dish, although I don’t know if the rest of my family would eat it. But I could definitely make it and eat it myself. I love trying different dishes, and this is certainly different.

  • Love anything healthy! The only thing would be that i would have to change the pesto with sun dried tomatoes to normal pesto as i am allergic to sun dried tomatoes. But i am sure will be just as nice
