This Caramel Hedgehog Slice Recipe gives you little squares of smooth delicious caramel flavour combined with a crunch from the biscuits. Very sweet, so only a small square is all you need!
Ingredients (makes 35 small squares of slice)
- 250g Packet Plain sweet biscuits, coarsley chopped
- 1/2 cup Desiccated coconut
- 395g can Condensed milk
- 125g Unsalted butter, chopped
- 1/2 cup Brown sugar firmly packed
- 1/4 cup Caster sugar
- 1/4 cup Golden syrup
- 1/2 cup White chocolate, Melted to decorate
Method
- Grease a small rectangular slice tin, and line the base and sides with baking paper, extending paper 2cm above the pan edges
- Place biscuits and coconut in a large bowl, and set aside
- Combine condensed milk, butter, syrup and sugars in a saucepan. Stir over a medium heat until butter is melted and sugar dissolved. Bring to the boil, and gently boil stirring continually and vigorously for about 5 minutes, or until slightly thickened. Remove from heat
- Pour over the biscuit and coconut mixture, and gently stir to combine.
- Press mix firmly into the slice tin, pressing and flattening evenly across the base
- Cool to room temperature before putting in the fridge to set completely for a minimum of 4 hours, or better yet overnight
- Melt the chocolate in a microwave safe bowl in short bursts, stirring in between until smooth and melted
- Lift the slice from the tin and cut into small rectangles. Place onto a sheet of baking paper on the bench and drizzle with the melted white chocolate
- Store in the fridge in an airtight container

These can be made a few days in advance and just stored in the fridge in an air tight container. Eat with in 5 days
