I got the receipe from high school home eco class, and I have been making it ever since – the little marzipan carrots are easy enough for little people to help

Ingredients (makes 1 cake)

  • 1/3 Cup Vegetable Oil
  • 1 Cup Brown Sugar
  • 2 Eggs
  • 1 1/2 Cups Grated Carrot
  • 1 Cup Self Raising Flour
  • 1/2 Cup Choppped Walnuts
  • 1/2 teaspoon Vanilla Essence
  • 1/2 teaspoon Cinnamon
  • 125 grams Cream Cheese
  • 2 tablespoons Icing sugar
  • lemon juice
  • marzipan and food colouring


  1. Set oven to 190C. Combine oil, eggs and butter. Add all other ingredients, mix well.
  2. Bake in greased tin for 50 minutes. Allow to cool.
  3. Beat cream cheese,icing sugar adding a little lemon juice at a time until smooth and creamy. Spread over cake
  4. Roll out marzipan, form into little carrots and paint with food colouring.
