I got the receipe from high school home eco class, and I have been making it ever since – the little marzipan carrots are easy enough for little people to help


Ingredients (makes 1 cake)

  • 1/3 Cup Vegetable Oil
  • 1 Cup Brown Sugar
  • 2 Eggs
  • 1 1/2 Cups Grated Carrot
  • 1 Cup Self Raising Flour
  • 1/2 Cup Choppped Walnuts
  • 1/2 teaspoon Vanilla Essence
  • 1/2 teaspoon Cinnamon
  • 125 grams Cream Cheese
  • 2 tablespoons Icing sugar
  • lemon juice
  • marzipan and food colouring

Method

  1. Set oven to 190C. Combine oil, eggs and butter. Add all other ingredients, mix well.
  2. Bake in greased tin for 50 minutes. Allow to cool.
  3. Beat cream cheese,icing sugar adding a little lemon juice at a time until smooth and creamy. Spread over cake
  4. Roll out marzipan, form into little carrots and paint with food colouring.

  • Absolutely love a good carrot cake – always order one when i see it at a cafe but never thought to make it myself at home. Have eaten it since i was little when a neighbour would always bring one by whenever she baked. Brings back amazing memories of childhood !

  • Oh yum! I haven’t had carrot cake in so long and it used to be one of my favourite cakes as a kid. This one looks really delicious. It’s definitely going on my list for back to school snacks. Pretty sure my kids will love it and if not there’s more for me 🤣
