A not so healthy but tasty meal.


Ingredients (makes 10 Croquettes)

  • 60 grams Butter
  • 140 grams Plain flour
  • 1/2 cup Milk
  • 350 grams Grated cheese
  • 2 Egg yolk
  • 2 Egg white
  • 2 teaspoons Milk
  • 1 Onion finely chopped

Method

  1. Melt the butter and add the flour to make a roux then add the milk bit by bit and heat until you have a thick and smooth consistency. Add the cheese and let it melt together then add the egg yolk. Add pepper, salt and nutmeg to suit your taste (optional).
  2. Meanwhile lightly sauté onion in pan until transparent mix in with mixture. Place the mass on a foil covered plate and place this in the fridge until the mass becomes stiff. Divide the mass in portions
  3. Dip the portions in the egg white and then in the bread crumbs then again dip them in the egg white and in the bread crumbs. Let the croquettes rest for an hour.
  4. Bake the cheese croquettes for 5 minutes in a deep fryer on a temperature of 180 degrees celcius. Place the croquettes on a paper towel for a few minutes before serving.

Notes

Please be careful when biting into these as they are piping hot. A tasty vegetarian dish especially nice served with lemon wedges & a crisp green salad. For a variation ham, bacon, goats cheese & even potato can be added.
