Ingredients (makes 21 )

  • 2 cups mashed potato
  • 3 eggs
  • 1 cup grated cheese
  • Additional grated cheese to top for serving

Method

  1. Mix all ingredients - mashed potato, eggs and cheese in bowl and season.
  2. Add a spoonful of mixture into mini cupcake maker.
  3. Cook for 15-20 mins depends on the size of cupcake maker - but I would advise just keep checking as all cupcake models are different.
  4. After cooked top with additional cheese before serving.

  • I might try aweet potato with low fat cheese. a lower GI level. Ordinary Potatoes have too much starch in them and convert to too much sugar in your blood.

  • I have a homemaker mini cupcake maker but you can adapt it to cook in the oven and put them in muffin/ cupcake tins.
