Ingredients (serves 12)

  • 20 Chocolate Ripple biscuits, crushed
  • 80g Butter, melted
  • 500g Farmer’s Table Cream Cheese
  • 1/4 Cup Caster Sugar
  • 2 Tsp Gelatine, dissolved in 1/4 cup boiling water
  • 200g Milk Cooking Chocolate, melted
  • 2 Cherry Ripes, roughly chopped
  • 1 Cup Cream, softly whipped

Method

  1. Combine the biscuit crumbs and butter then press into the base of a greased and lined springform pan. Chill until firm.
  2. Beat the Farmer’s Table and sugar until smooth. Add the prepared gelatine and chocolate and mix until smooth. Fold through the chopped Cherry Ripe pieces and whipped cream.
  3. Pour the mixture over the prepared base. Chill for 3 hours.

Notes

*You can find Farmer’s Table in the Cream Cheese section of the dairy case at Woolworths. *I use a stand mixer to make this *An extra Cherry Ripe, roughly chopped, can be placed on top for decoration

  • I going 10kgs just reading the recipes. Love cherry rides. I think this would go great with the double choc cherry rides. Yum yum!!!

  • Sounds delish! The bags of mini chocolates (cherry ripe in this case) regularly go on sale for half price at either Coles or Woolworths, which is makes it cheaper than just buying the 2 full bars. 52gx2 bars or 180g pkt of cheesecake making and decorating chocolates, while have leftovers to munch on while waiting for the cheesecake to set.

  • Cheesecakes are something I love to make (and eat) but for this recipe I’d need to get 4 cherry ripes. Two for the mixture, one to put on the top and one spare for me to nibble on while waiting for the cheesecake to set

  • Sounds like a simple and delicious cheesecake recipe – I love Cherry Ripe – would be fabulous with some extra Cherry Ripe pieces on top.


    • The Cherry Ripe pieces could be chopped or shaved.
