Simple quick healthy noodle recipe for a side dish or a main dish


Ingredients (serves 4 | makes 8 Side serves)

  • 250g Rice or Egg noodles
  • 2 Sticks Celery chopped
  • 1 Large Carrot chopped
  • 125g Snow Peas
  • 1 Can Baby Corn Pieces
  • 1 Large Onion Sliced
  • 500g Prawns
  • 1 Skinless Chicken Breast Cooked & Sliced
  • 1 Cup Light Soy
  • 1 Cup Water
  • 4 Tablespoons Honey
  • 4 Tablespoons Chopped Corriander
  • 2 Cloves Crushed Garlic

Method

  1. Make Syrup from the last 5 Ingredients (Soy, Water, Honey, Corriander & Garlic) Divide mix in half.
  2. Cook Prawns in half the syrup mix. Once cooked add the chicken, and Veges in and stirfry till you are happy with the veges being cooked (some like crunchy carrots some like softer so do to your taste)
  3. Prepare the noodles as directed on the packet and add to the prawn, chicken & vege mix.
  4. Mix everything together well then add the remaining syrup and mix through. Serve

Notes

Smoked chicken breast makes a yummy substitute to a normal cooked chicken breast. Cooked prawns can be used instead of raw prawns, just halve the syrup mix and skip the cooking prawns step to make the meal quicker to create.
