Green olive tapenade is very flavourful! Add them on pizzas or pasta dishes for a nicer touch!


Ingredients (serves 1)

  • 1 cup Green Olive
  • 1/4 cup Extra virgin Olive Oil
  • 3 Capers
  • 1 clove Garlic
  • 2 slices Lawsons Wholemeal bread
  • 1 slice Cooked chicken breast
  • 1/2 large avocado
  • To tasteq Pepper

Method

  1. Process the first 4 ingredients in a food processor until smooth. That will be the Olive tapenade. Taste and try not to finish it ;)
  2. Layer avocado, chicken breast then olive tapenade in between 2 bread slices.
  3. Add some freshly ground pepper and serve.

  • Fancy sounding sandwich!

  • I made this today for lunch, and had it on some Bakers Delight Capeseed bread, and it was absolutely amazing! I also added some sliced red onion. I’m going to make sure that I always have some of this prepared in the fridge.

  • Oh my word, this would be so nice. I love olives, garlic and capers. I’m so going to try and make this, but I think I’d have to make a double batch, as it wouldn’t last long with me around.
