For a healthy alternative to a winter curry, I like to whip this up, it’s quick and so tasty.


Ingredients (serves 4)

  • 1 large Sweet Potato, chopped
  • 300g broccoli florets
  • 100g baby spinach
  • 400g chickpeas
  • 300g coconut/korma curry simmer sauce
  • 1 large chicken breast, diced

Method

  1. Microwave sweet potato pieces for 4-6 minutes to soften.
  2. Brown chicken in a frying pan over medium heat, then add sauce and simmer for 3-5mins
  3. Add sweet potato, broccoli and chickpeas and cook for 10 minutes, or until potato and broccoli are soft.
  4. Drop your spinach over the top and fold in, wilting the leaves.
  5. Serve.

Notes

Rice is optional, due to the sweet potato, you might want to avoid rice because the meal becomes very starch-heavy.

  • Mum use to make this but the sausages were cut up and dotted over the pudding. Like the idea of whole sausages less work.

  • I really do love curries and this recipe sounds good and looks divine on the plate. The flavours sound good and I would add a little rice to this dish as I just love rice and curry dishes. Rice is never an option for me! Just have to have it with curry dishes. :)


    • Plan to make this on the weekend – get a jump on the cooler weather. :)
