Really nice cold and shredded into a green salad. You can also grill instead of frying – just mix the oregano and lemon zest in a little bit of oil, and rub well into the chicken before grilling.

Ingredients (serves 4)

  • 1 tablespoon olive oil
  • 4 chicken breast fillets
  • 1 tablespoon lemon zest
  • 2 tablespoons oregano leaves
  • Salt and pepper
  • Juice of one lemon


  1. Cook chicken fillets in olive oil for a minute each side or until golden brown.
  2. heat and add oregano and lemon zest. Cover and cook for 5-8 minutes or until cooked through.
  3. Remove from pan and sprinkle with salt and pepper. Slice thickly and serve drizzled with lemon juice with steamed greens.
