Ingredients (serves 8 | makes 25 patties)

  • 1 onion finely chopped
  • 2 zucchini grated
  • 1 can chickpeas crushed
  • 1/2 red capsicum finely chopped
  • 1/2 cup grated cheese
  • 1/2 cup wholemeal flour
  • 1-2 eggs
  • 1/4 cup fresh parsley

Method

  1. Mix all ingredients together and add egg.
  2. Mould into patties and cook in a frying pan with oil until golden brown.

  • My kids love chickpea patties. When I make them I always stick some in the freezer, sometimes for in their school lunch, sometimes as part of their dinner for another day.
