This is such a simple recipe and so easy to swap out ingredients to change the flavour.


Ingredients (serves 16)

  • 250g digestive biscuits
  • 4 x 50g honeycomb bars
  • 600mL thickened cream
  • 395g Sweetened Condensed Milk

Method

  1. Grease and line two 18 x 28cm pans with baking paper then lay biscuits to create a base.
  2. In an electric mixer, whisk cream until firm peaks form, pour in Sweetened Condensed Milk, and continue beating until firm. Crush three honeycomb bars, and then fold into cream mixture.
  3. Pour cream mixture over digestive biscuits base, and crush last honeycomb bar over the top of mixture. Place in freezer until set. Once set cut into squares, and serve.

Notes

Variations: CHOC MINT: chocolate ripple biscuits on the base, 4 x mint aero bars and mint ice magic on top. CHERRY RIPE: chocolate ripple biscuits on the base, 2 x cherry riper 2x coconut roughs bars and place cherries on top
